There are many good dishes really. I agree on the "pad med mamuang", gai, goong or whatever with that use to be good. "pad preaw paan" with chicken or shrimps use to be OK as long as they use pineapple in it.
"ba mii haeng" egg noodles with only a little bit of broth, no soup. Some nuts and then your choice of fish balls "luug chin plaa" or pork...
A good "som tam thai" with crab are usually very tasty as a snack. I prefer the Thai model over the Laos style with "plaa la" the rotten fish, that many Isaan people eats on a daily basis.
